Food Post: Oreo Cheesecake Cookies

When I first got into baking I made nothing else but cookies. They're very easy and fun to make especially these oreo cheesecake cookies! they're egg-free! You can just imagine how tempted I was to just eat the batter and skip baking.



I made more than a dozen, but me being the "I can't eat what I make" person ended up giving these away. I did not take a lot of pictures this time since it's just about mixing the ingredients together. 

Oreo Cheesecake Cookies Recipe:

Yield: 16 cookies
Temperature: 375 F bake for 15 to 20 minutes

Ingredients:
1/2 cup unsalted butter-room temperature
3 ounces of cream cheese-room temperature
2/3 cup of powdered sugar
1 and half tsp of vanilla extract
1 cup all-purpose flour
1/2 cup mini chocolate chips
1 cup Oreo cookie crumbs

Directions:

1. Pre-heat the oven.
2. Whisk the butter and cream cheese together. 
3. add sugar and vanilla.
4. add flour.
5. with a spatula, fold in the mini chocolate chips.


6. scoop small balls (about 1.5" diameter) then roll in the cookie crumbs. Line your pan with parchment paper and place each ball at least an inch apart.


Bake for 15 to 20 minutes or until the sides are golden the tops a bit puffed. Once completely baked, take them out of the oven and leave them to cool for 2 minutes on the pan. (cookies are very soft when you take them out of the oven, so it's best to let them harden a bit before transferring to a wire rack)
