My sister-in-law sent us a huge Jar of peanut butter a few weeks ago. I LOVE peanut butter, I can eat it alone or spread it on a nice warm toast with coffee on a rainy day (like today!). But since there's only me and my husband in our house, a huge jar will take forever for us to consume! haha, sorry just exaggerating. I've been searching for different recipes which includes peanut butter and yesterday I thought of doing this Buckeye Peanut butter cup cookies.
Buckeye Peanut Butter Cup Cookies
Ingredients:
Yield: 20 cookies
1 and a half cups all-purpose flour
half a cup unsweetened cocoa powder
half a teaspoon baking soda
1/4 teaspoon salt
half a cup unsalted butter, at room temperature
half a cup granulated sugar (plus more for rolling)
half a cup light brown sugar
1/4 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
half a cup unsweetened cocoa powder
half a teaspoon baking soda
1/4 teaspoon salt
half a cup unsalted butter, at room temperature
half a cup granulated sugar (plus more for rolling)
half a cup light brown sugar
1/4 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
For the Filling:
3/4 cup creamy peanut butter
3/4 cup powdered sugar
3/4 cup powdered sugar
Directions:
1. Pre-heat oven to 375 F
2. In a bowl combine the flour, cocoa powder, baking soda and salt.
3. In a separate bowl whisk the butter, granulated sugar, brown sugar and peanut butter until smooth. Add the egg and vanilla extract.
4. Add the Flour mixture.
5. In a small plate, put some extra granulated sugar for rolling the cookies.
6. In a small bowl, combine your ingredients for the filling. mix until smooth.
7. Take a tablespoon of the cookie dough and
flatten it with your hands. Take about 1 teaspoon of the peanut butter
filling and place it in the center of the cookie dough. Wrap the chocolate dough around the peanut butter
center, pressing to seal. Roll the cookie into a ball and roll in the
sugar. Place the cookies on a baking sheet about 2 inches
apart.
8. Bake for 7 to 9 minutes. Let cool on the baking sheet for 2 minutes,
then remove to a wire rack to cool completely.
Serve and Enjoy!
Yum! My uncle from Canada loves to send us Kraft Peanut Butter (it is really flavorless) everytime there's a package for us. :D I'm not with peanut butter, but this look interesting :)
