This recipe was from the Browneyedbaker.
Dark chocolate cupcake with peanut butter frosting.
The photo above is what you need for the "cupcake"
Temp: 350 F bake for 20 minutes
Ingredients:
(yield: 12 to 15 big cupcakes)
1 stick unsalted butter, room temp.
4 ounces chopped bittersweet chocolate
4 eggs
1 cup sour cream
1 and a half cup of all purpose flour
1 and a half tsp of vanilla
1 tsp baking powder
1 tsp baking soda
1 cup dutch processed cocoa
1 and a half cup of granulated sugar
1/2 tsp salt
1. Pre-heat oven
2. combine cocoa, butter and chocolate in a heatproof bowl. Set over saucepan containing simmering water. when completely melted, remove from heat then set aside.
3. whisk flour, baking soda and baking powder.
4. whisk eggs. add sugar, vanilla and salt. Add the chocolate mixture and 1/3 of the flour mixture. Add sour cream and when fully incorporated add the remaining flour mixture. Your batter should look (and feel) thick, similar to this:
5. line your muffin/cupcake pan with cupcake liners and pour your batter about 2/3 full.
Bake for 20 minutes and you should have something like this : :D yay cupcakes!
Now for the peanut butter frosting! :)
Ingredients:
1 cup confectioner's sugar
1 cup peanut butter
5 tbsp unsalted butter-room temp
3/4 tsp vanilla
1/4 tsp salt
1/3 cup heavy cream
Just mix everything together making sure that there are no lumps! :)
Decorate your cupcakes and serve! :)
